Make this incredibly easy No-Bake Chocolate Eclair Cake. It features soft graham cracker layers, creamy vanilla pudding, and rich chocolate frosting, tasting just like classic eclairs without turning on your oven. This is a perfect make-ahead dessert for any gathering.

Ingredients

Scale
  • 1 (3.9 ounce) package instant vanilla pudding mix
  • 2 cups cold milk
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 box (14.4 ounces) graham crackers
  • 1 (5.1 ounce) package instant chocolate pudding mix
  • 1 3/4 cups cold milk (for chocolate layer)
  • 1 (16 ounce) container chocolate frosting

Instructions

  1. Prepare the vanilla pudding layer: In a medium bowl, whisk together the instant vanilla pudding mix and 2 cups of cold milk until thickened, about 2 minutes. Gently fold in the thawed whipped topping until just combined.
  2. Assemble the first layer: Line the bottom of a 9×13 inch baking dish with a single layer of graham crackers, breaking them as needed to fit the bottom completely.
  3. Add the first filling layer: Spread half of the vanilla pudding mixture evenly over the graham crackers.
  4. Add the second cracker layer: Place another layer of graham crackers on top of the vanilla filling.
  5. Prepare the chocolate pudding layer: In a separate bowl, whisk together the instant chocolate pudding mix and 1 3/4 cups of cold milk until thickened, about 2 minutes. Do not add whipped topping to this layer.
  6. Add the chocolate layer: Spread the chocolate pudding mixture evenly over the second cracker layer.
  7. Add the final cracker layer: Top with the last layer of graham crackers.
  8. Top with frosting: Spread the chocolate frosting evenly over the top cracker layer.
  9. Chill: Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, to allow the graham crackers to soften into a cake-like texture.
  10. Serve: Cut into squares and serve cold.

Notes

  • Chilling overnight makes the graham crackers perfectly tender, mimicking the pastry of a real eclair.
  • You can use pre-made chocolate glaze instead of canned frosting for a shinier top layer.
  • This is a great make ahead dessert; it tastes best when fully chilled.
