Make this classic, cheesy Rotel Dip with Velveeta and ground beef. It is a simple, warm appetizer perfect for parties and game days, and it comes together fast on the stovetop.

Ingredients

Scale
  • 1 pound ground beef
  • 1 (10 ounce) can Ro-Tel Original Diced Tomatoes and Green Chilies, undrained
  • 1 (16 ounce) package Velveeta cheese, cut into cubes
  • 1 teaspoon taco seasoning (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Drain off any excess grease completely.
  2. Add the undrained Ro-Tel tomatoes and the taco seasoning, if using, to the skillet with the beef. Stir to combine.
  3. Reduce the heat to low. Add the cubed Velveeta cheese to the skillet.
  4. Stir the mixture constantly until the Velveeta cheese is completely melted and the dip is smooth and creamy. Do not let it boil.
  5. Serve the hot Rotel Dip immediately with tortilla chips or crackers.

Notes

  • For a slow cooker version, brown the beef and mix all ingredients in a small slow cooker. Heat on low for 1 to 2 hours, stirring occasionally until smooth.
  • You can substitute the ground beef with ground sausage for a different flavor profile.
  • If the dip thickens while sitting, add a splash of milk or a little more Rotel juice to restore creaminess.
