Get all the savory, cheesy flavors of a classic Reuben sandwich in this simple, warm dip, perfect for game days or parties.

Ingredients

Scale
  • 1 cup chopped cooked corned beef
  • 1 cup shredded Swiss cheese
  • 1/2 cup sauerkraut, drained and squeezed dry
  • 1/2 cup mayonnaise
  • 1/4 cup Thousand Island dressing
  • 4 ounces cream cheese, softened
  • 1/4 teaspoon caraway seeds (optional)
  • Rye bread slices or crackers, for serving

Instructions

  1. Combine the chopped corned beef, Swiss cheese, sauerkraut, mayonnaise, Thousand Island dressing, softened cream cheese, and caraway seeds (if using) in a small slow cooker.
  2. Stir all ingredients together until they are well combined and creamy.
  3. Cover the slow cooker and cook on LOW for 1.5 to 2 hours, or on HIGH for 1 hour, stirring halfway through.
  4. Once the dip is hot and melted, serve immediately with rye bread slices or crackers for dipping.

Notes

  • You can use pastrami instead of corned beef for a slight flavor variation.
  • Squeeze the sauerkraut very dry; excess moisture will make the dip watery.
  • If you do not have a slow cooker, you can mix the ingredients in an oven-safe dish and bake at 350 degrees Fahrenheit for 20 minutes until hot and bubbly.
