You can make rich, smooth homemade mayonnaise in minutes with this easy, foolproof recipe. Skip the store-bought jar and create a fresh, flavorful condiment perfect for sandwiches, salads, and dips.

Ingredients

Scale
  • 1 large egg, room temperature
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice or white vinegar
  • 1/4 teaspoon salt
  • 1 cup neutral oil (like canola, grapeseed, or light olive oil)

Instructions

  1. Place the egg, Dijon mustard, lemon juice (or vinegar), and salt into the bottom of a tall, narrow container suitable for an immersion blender, or into a standard blender jar.
  2. Pour the entire 1 cup of oil over the top of the other ingredients. Do not stir.
  3. If using an immersion blender, place the head of the blender all the way to the bottom of the container. Turn the blender on high speed and keep it pressed to the bottom for about 15 to 20 seconds until the mixture starts to emulsify and turn thick.
  4. Slowly begin to lift the blender up and down to incorporate the remaining oil at the top until the mayonnaise is completely thick and creamy. This should take less than one minute.
  5. If using a standard blender, start blending on low speed. Very slowly, drizzle the oil in a thin, steady stream through the top opening while the blender runs. Stop when all the oil is incorporated and the mixture is thick.
  6. Taste the rich and smooth mayo and adjust salt or add a small squeeze more lemon juice if you want more tang.
  7. Transfer your fresh condiment to an airtight container. You have made a kitchen staple!

Notes

  • Use room temperature ingredients; cold ingredients increase the chance of separation.
  • If your mayonnaise separates, place one teaspoon of water or one new egg yolk in a clean bowl. Slowly drizzle the broken mixture into the new ingredient while whisking or blending constantly until it comes back together.
  • This homemade mayonnaise is best used within one week when stored in the refrigerator.
  • Use this creamy mayonnaise as a healthy sandwich spread or as a base for dressings and dips.
