Ingredients
Scale
6 large eggs
1/2 cup whole milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
12 slices thick bread (like challah or brioche)
2 tablespoons butter, for the griddle
Instructions
In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and salt until fully combined. This is your classic french toast batter.
Heat a large griddle or non-stick skillet over medium heat. Add half of the butter and let it melt until it sizzles slightly.
Dip one slice of bread into the egg mixture, letting it soak for about 15 to 20 seconds per side. You want the bread coated but not soggy for a custardy center.
Place the soaked bread onto the hot griddle. Cook for 3 to 4 minutes per side, until the French toast is golden brown and cooked through.
Remove the cooked slices and keep them warm while you cook the remaining bread, adding more butter to the griddle as needed.
Serve immediately with your favorite toppings like maple syrup or fresh fruit.
Notes
For extra fluffy French toast, use slightly stale or day-old bread; it absorbs the custard better without falling apart.
If you want a hint of extra sweetness in the batter, add 1 tablespoon of granulated sugar to the egg mixture.
To keep a large batch warm while you finish cooking, place finished slices on a baking sheet in a 200°F oven.
