Make fluffy, high-protein egg bites at home using an oven method. These are perfect for meal prep and offer a quick, satisfying breakfast similar to popular coffee shop versions.

Ingredients

Scale
  • 1 cup cottage cheese (full fat or low fat)
  • 6 large eggs
  • 1/4 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional add-ins: 1/2 cup cooked, crumbled bacon or 1/2 cup chopped spinach

Instructions

  1. Preheat your oven to 300°F (150°C). Lightly grease a 12-cup standard muffin tin or use silicone liners.
  2. In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth, about 30 seconds. This step creates the fluffy texture.
  3. If using add-ins, stir the shredded cheese and your choice of bacon or spinach into the blended egg mixture. Do not overmix.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes. The egg bites are done when they are set in the center and a toothpick inserted comes out clean.
  6. Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
  7. These are great served warm or stored for later meal prep.

Notes

  • For a Starbucks sous vide copycat texture, you can bake these in a water bath (bain-marie): place the muffin tin inside a larger roasting pan, pour hot water into the roasting pan until it reaches halfway up the sides of the muffin tin, then bake.
  • These egg bites freeze well. Cool completely, then place them in an airtight, freezer-safe container for up to one month. Reheat in the microwave for 30-60 seconds.
  • If you prefer a keto egg bites version, ensure your cheese and any meat add-ins are low-carb.
