Ingredients
Scale
1 (4 to 6 pound) boneless or bone-in turkey breast
1/2 cup unsalted butter, softened
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon dried sage
1 teaspoon salt
1/2 teaspoon black pepper
1 medium yellow onion, quartered
2 carrots, roughly chopped
2 celery stalks, roughly chopped
1 cup chicken broth
Instructions
In a small bowl, combine the softened butter, rosemary, thyme, sage, salt, and pepper. Mix until you form a compound butter.
Pat the turkey breast dry with paper towels. Gently lift the skin over the breast meat and rub half of the herb butter directly onto the meat under the skin. Rub the remaining butter over the outside of the turkey skin.
Place the onion, carrots, and celery in the bottom of your slow cooker. These vegetables create a natural rack.
Place the seasoned turkey breast on top of the vegetables in the slow cooker.
Pour the chicken broth around the vegetables, avoiding pouring it directly over the turkey skin.
Cover the slow cooker and cook on LOW for 5 to 7 hours, or on HIGH for 3 to 4 hours. The turkey is done when an instant-read thermometer inserted into the thickest part reads 165 degrees Fahrenheit.
Carefully remove the turkey breast from the slow cooker and let it rest on a cutting board, loosely tented with foil, for 15 minutes before slicing.
If making gravy, strain the liquid from the slow cooker into a saucepan. Skim off excess fat. Thicken the liquid with a cornstarch slurry (2 tablespoons cornstarch mixed with 1/4 cup cold water) over medium heat until desired consistency is reached.
Notes
For the juiciest results, cook the turkey on the LOW setting.
If your slow cooker is too small to fit the turkey breast flat, you may need to fold the thinner end underneath itself.
This method will not produce crispy skin; the skin will remain soft.
