This is the easy Crockpot Marry Me Chicken recipe you need for a flavorful, hands-off weeknight dinner. Tender chicken cooks in a rich, creamy Parmesan sauce with sun-dried tomatoes, making it a family favorite that feels special.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1 tablespoon minced garlic
  • 1 (8 ounce) package cream cheese, cubed
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker. Sprinkle evenly with salt, pepper, garlic powder, and Italian seasoning.
  2. Pour the chicken broth over the chicken. Add the chopped sun-dried tomatoes and minced garlic around the chicken.
  3. Place the cubed cream cheese on top of the chicken pieces.
  4. Cover the slow cooker and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  6. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy. Let it heat through for about 10 minutes on LOW, stirring occasionally.
  7. Taste the sauce and add more salt or pepper if needed.
  8. Serve your Crockpot Marry Me Chicken hot over cooked pasta, rice, or mashed potatoes. Garnish with fresh parsley.

Notes

  • If you use chicken thighs instead of breasts, the cooking time may be slightly shorter, around 3 to 4 hours on LOW.
  • For an extra layer of flavor, you can sear the chicken breasts in a skillet for 2 minutes per side before placing them in the slow cooker.
  • If the sauce seems too thick after stirring in the cream and Parmesan, add a splash more chicken broth or heavy cream until you reach your desired consistency.
