Make a fast and inexpensive dinner using a single skillet. This recipe delivers crispy fried potatoes alongside savory sausage.

Ingredients

Scale
  • 1 lb potatoes (Yukon Gold or Russet), diced into 1/2-inch pieces
  • 1/2 lb smoked sausage (like Kielbasa or Andouille), sliced
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the diced potatoes to the hot skillet in a single layer if possible. Do not overcrowd the pan.
  3. Cook the potatoes for 8 to 10 minutes, stirring only every 3 to 4 minutes. This allows the bottom side to brown and crisp.
  4. Add the sliced sausage and chopped onion to the skillet.
  5. Continue cooking for another 7 to 10 minutes, stirring occasionally, until the potatoes are golden brown and crispy and the sausage is heated through and slightly browned.
  6. Stir in the salt, pepper, and garlic powder during the last minute of cooking.
  7. Serve immediately for a quick dinner.

Notes

  • For extra crispiness, cook the potatoes in two batches if your skillet is small.
  • Use pre-cooked sausage to reduce the overall cooking time.
  • If you prefer, add 1/4 cup of chopped bell pepper along with the onion for extra flavor.
