A simple, one-pan recipe for tender chicken breasts cooked in a rich, creamy sauce with fresh spinach and Parmesan cheese.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. Reduce heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  5. Add the minced garlic and Italian seasoning; cook for 1 minute until fragrant.
  6. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for 2 minutes.
  7. Stir in the heavy cream and bring the sauce back to a gentle simmer. Do not boil rapidly.
  8. Reduce the heat to low. Gradually stir in the Parmesan cheese until the sauce is smooth.
  9. Add the fresh spinach to the skillet. Stir until the spinach wilts into the sauce, about 2 minutes.
  10. Return the cooked chicken to the skillet and stir to coat with the sauce. Heat through for 1 minute.
  11. Serve immediately.

Notes

  • For a low-carb option, serve this dish over cauliflower rice instead of pasta or potatoes.
  • To prevent the sauce from breaking, keep the heat low when adding the cream and cheese; do not let the sauce boil vigorously after adding the dairy.
  • You can substitute chicken thighs for chicken breasts if desired; adjust cooking time as needed.
  • Adding 1/4 cup of sun-dried tomatoes (drained) with the onions adds extra flavor.
