Ingredients
Scale
1 pound ground beef
1 medium onion, chopped
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) whole kernel corn, drained
1 can (10 ounces) diced tomatoes and green chilies (like Rotel), undrained
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
1 box (8.5 ounces) cornbread mix (like Jiffy), prepared according to package directions (usually requires milk and egg)
1 cup shredded cheddar cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the ground beef and chopped onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
Stir the rinsed beans, drained corn, undrained diced tomatoes with green chilies, chili powder, cumin, salt, and pepper into the beef mixture. Heat this filling through for about 5 minutes.
Spread the beef mixture evenly into the bottom of your prepared baking dish.
Prepare the cornbread mix according to the package directions. This usually involves mixing the dry mix with an egg and milk.
Pour the prepared cornbread batter directly over the beef mixture in the baking dish. Spread it gently to cover the filling.
Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
Remove the casserole from the oven. Sprinkle the shredded cheddar cheese evenly over the top of the hot cornbread. Let it sit for 5 minutes so the cheese melts.
Cut into squares and serve this hearty ground beef casserole with cornbread topping warm.
Notes
For an extra Tex-Mex flavor, add 1/2 teaspoon of garlic powder when seasoning the beef mixture.
This recipe is freezer friendly. Assemble the casserole completely (do not bake), cover tightly, and freeze for up to three months. Thaw overnight in the refrigerator before baking as directed, adding 10-15 minutes to the bake time.
If you prefer a slightly sweeter cornbread, use a sweet cornbread mix instead of the standard one.
