Ingredients

Scale
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup chopped red onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1 cup chopped Roma tomatoes
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • Tortilla chips, for serving

Instructions

  1. Prepare all your vegetables: chop the onion, bell peppers, tomatoes, and cilantro. Place them in a large mixing bowl.
  2. Rinse and drain the black beans and corn thoroughly. Add them to the bowl with the chopped vegetables.
  3. In a small bowl, whisk together the dressing ingredients: olive oil, lime juice, cumin, salt, black pepper, and chili powder until combined.
  4. Pour the zesty vinaigrette dressing over the bean and vegetable mixture.
  5. Gently fold all ingredients together until everything is evenly coated.
  6. Cover the bowl and chill the Cowboy Caviar for at least 30 minutes before serving. This allows the flavors to meld.
