Make a quick, high-protein chocolate treat in minutes using your microwave. This single-serving brownie uses cottage cheese for moisture and texture.

Ingredients

Scale
  • 1/4 cup cottage cheese (full fat or 2%)
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sweetener (like erythritol or sugar)
  • 1 teaspoon melted coconut oil or butter
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour or almond flour
  • 1/8 teaspoon baking powder
  • 1 small square dark chocolate (optional, for topping)

Instructions

  1. Combine the cottage cheese, egg, cocoa powder, sweetener, melted oil, and vanilla extract in a microwave-safe mug or small ramekin.
  2. Use a fork or small whisk to mix the ingredients thoroughly until the cottage cheese curds are mostly broken down and the mixture is smooth.
  3. Stir in the flour and baking powder until just combined. Do not overmix.
  4. Place the optional square of dark chocolate on top of the batter, if using.
  5. Microwave on high for 60 to 90 seconds. Cooking time varies by microwave strength; start with 60 seconds.
  6. The brownie is done when the edges look set but the center is still slightly soft. It will firm up as it cools.
  7. Let it cool for a minute before eating your protein packed microwave snack.

Notes

  • For a fudgier texture, use almond flour instead of regular flour.
  • If your cottage cheese is very lumpy, blend it briefly before adding the dry ingredients.
  • This recipe is a great low carb cottage cheese treat if you use a zero-calorie sweetener.
