Ingredients
Scale
1 cup cottage cheese (2% or 4%)
6 large eggs
1/4 cup milk (any kind)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (cheddar or Monterey Jack)
1/2 cup cooked, crumbled bacon or diced ham (optional mix-in)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or use silicone liners.
In a blender, combine the cottage cheese, eggs, milk, salt, and pepper. Blend until the mixture is completely smooth. This step is key for a creamy texture similar to Starbucks egg bites.
Stir in the shredded cheese and any desired mix-ins, like bacon or ham, into the blended egg mixture.
Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Bake for 20 to 25 minutes, or until the egg cups are set and a toothpick inserted near the center comes out clean.
Let the egg cups cool in the muffin tin for 5 minutes before carefully removing them.
Serve warm or store them for meal prep egg cups throughout the week.
Notes
For a smoother, more sous-vide-like texture, you can bake the muffin tin in a water bath (bain-marie). Place the muffin tin inside a larger baking dish and fill the larger dish with hot water halfway up the sides of the muffin tin before baking.
These crustless quiche cups freeze well. Cool completely, then place them in an airtight container in the freezer for up to one month. Reheat in the microwave for 30–60 seconds.
Feel free to substitute the meat with cooked spinach or diced bell peppers for a vegetarian option.
