Ingredients
Scale
2 tablespoons butter
1 cup chopped yellow onion (about 1 small onion)
1 cup chopped carrots (about 2 medium carrots)
1 cup chopped celery (about 2 celery stalks)
2 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken broth
2 cups milk
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon nutmeg
4 cups broccoli florets (about 1 pound)
2 cups shredded sharp cheddar cheese
1/2 cup heavy cream (optional, for extra richness)
Instructions
Melt butter in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
Add minced garlic and cook for 1 minute more until fragrant.
Sprinkle flour over the vegetables and stir well. Cook for 1-2 minutes to toast the flour.
Gradually whisk in chicken broth, then milk, ensuring no lumps form.
Bring the mixture to a simmer, stirring occasionally.
Add salt, pepper, and nutmeg.
Stir in the broccoli florets. Cover and simmer for 10-15 minutes, or until broccoli is tender.
Reduce heat to low. Stir in the shredded cheddar cheese until melted and smooth. Do not boil after adding cheese.
If desired, stir in heavy cream for a richer soup.
Serve hot and enjoy your homemade Panera-style soup!
Notes
For a smoother soup, you can use an immersion blender or a standard blender to partially blend the soup before adding the cheese.
Feel free to add a pinch of cayenne pepper for a little heat.
This soup is best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
