Make these buttery cookies featuring a distinct swirl pattern combining vanilla and rich coffee flavors.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon instant espresso powder
  • 1 teaspoon hot water

Instructions

  1. Cream the softened butter and sugar together until light and fluffy. Beat in the egg and vanilla extract.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Divide the dough evenly into two separate bowls.
  4. In the first bowl (Vanilla Dough), leave the dough as is.
  5. In the second bowl (Coffee Dough), dissolve the instant espresso powder in the hot water. Mix this solution thoroughly into the dough in the second bowl until the color is uniform.
  6. Roll each dough portion into a log approximately 1.5 inches in diameter.
  7. Place the two logs side-by-side. Gently press them together.
  8. Roll the combined dough log in plastic wrap and chill for at least 2 hours, or until firm enough to slice.
  9. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  10. Slice the chilled dough log into 1/4-inch thick rounds. You will see the marble pattern in each slice.
  11. Place slices onto the prepared baking sheets, leaving about 2 inches between them.
  12. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  13. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a stronger coffee flavor, increase the espresso powder to 1.5 teaspoons in the coffee dough.
  • To achieve a more pronounced marble effect, gently twist the two dough logs together slightly before rolling them into the final cylinder.
  • Do not overmix the dough after adding the flour to keep the cookies tender.
