Make a stack of incredibly fluffy, golden chocolate chip pancakes from scratch. This easy homemade recipe delivers gooey, melty chocolate in every bite and is perfect for your next weekend brunch or family breakfast.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted, plus more for the griddle
  • 1 cup semi-sweet chocolate chips

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar. This is the dry mix.
  2. In a separate medium bowl, whisk together the milk, egg, and 3 tablespoons of melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine. Overmixing develops gluten and makes pancakes tough.
  4. Gently fold in the chocolate chips.
  5. Heat a lightly oiled griddle or large non-stick skillet over medium heat. You know it is ready when a drop of water sizzles immediately.
  6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  7. Cook for 2 to 3 minutes per side. You will see bubbles form on the surface and the edges will look set when it is time to flip.
  8. Flip the pancakes and cook for another 1 to 2 minutes until golden brown and cooked through.
  9. Serve immediately with your favorite toppings like maple syrup or fresh fruit.

Notes

  • For extra fluffy pancakes, separate the egg. Whisk the yolk with the wet ingredients, and whisk the egg white until soft peaks form. Fold the egg white into the batter last.
  • Resting the batter for 5 to 10 minutes before cooking helps the baking powder activate, leading to a lighter texture.
  • Use semi-sweet or dark chocolate chips for the best melt and flavor contrast.
