Ingredients
Scale
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 cup uncooked long-grain white rice
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15 ounce) can chickpeas, rinsed and drained
3 cups vegetable broth
1 cup unsweetened plain plant milk (soy or oat recommended)
1/2 cup nutritional yeast
1 teaspoon Dijon mustard
3 cups fresh broccoli florets
1/4 cup chopped fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×13 inch baking dish.
Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute more until fragrant.
Stir in the uncooked rice, thyme, salt, and pepper. Cook for 2 minutes, stirring constantly.
Add the rinsed chickpeas, vegetable broth, plant milk, nutritional yeast, and Dijon mustard to the skillet. Stir well to combine. Bring the mixture to a simmer.
Once simmering, remove the skillet from the heat. Stir in the broccoli florets.
Pour the entire mixture from the skillet into the prepared baking dish. Spread evenly.
Cover the baking dish tightly with aluminum foil.
Bake for 40 minutes.
Remove the foil and bake uncovered for an additional 10 to 15 minutes, or until the liquid is absorbed and the rice is tender and the top is slightly set.
Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
For a gluten-free option, confirm your vegetable broth is certified gluten-free.
You can substitute brown rice, but increase the baking time by 10 to 15 minutes.
Add 1 cup of frozen peas during the last 15 minutes of baking for extra vegetables.
If you prefer a thicker sauce, reduce the plant milk slightly.
