Ingredients
Scale
2 cups cooked, shredded chicken
1 (10.5 ounce) can condensed cream of chicken soup
1 cup mayonnaise
1 cup sour cream
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese, divided
1 cup steamed fresh or frozen broccoli florets
2 cups cooked white rice
1/2 cup crushed Ritz crackers (optional topping)
2 tablespoons melted butter (optional topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the cream of chicken soup, mayonnaise, sour cream, onion powder, garlic powder, salt, and pepper. Mix until smooth.
Stir in 3/4 cup of the cheddar cheese, the cooked chicken, broccoli florets, and cooked rice into the soup mixture. Mix everything well to coat.
Pour the mixture into the prepared baking dish and spread it evenly.
If using the topping, mix the crushed Ritz crackers with the melted butter. Sprinkle the remaining 1/4 cup of cheddar cheese over the casserole, then top with the cracker mixture.
Bake for 25 to 30 minutes, or until the casserole is hot and bubbly throughout and the topping is golden brown.
Let the casserole rest for 5 minutes before serving.
Notes
For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours before baking. Add 5 to 10 minutes to the bake time if baking directly from the refrigerator.
You can use leftover cooked chicken or quickly cook chicken breasts ahead of time.
If you prefer a crunchier topping without crackers, use 1/2 cup of panko breadcrumbs mixed with 1 tablespoon of melted butter instead.
