Make simple, comforting ground beef tacos featuring a rich, creamy filling bound with cheese and seasoning.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 4 ounces cream cheese, softened and cubed
  • 1/2 cup sour cream
  • 1 cup shredded cheddar or Monterey Jack cheese, divided
  • 12 hard taco shells or soft tortillas
  • Optional toppings: lettuce, diced tomatoes, salsa

Instructions

  1. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  2. Stir in the taco seasoning mix and water. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally, until the liquid reduces slightly.
  3. Reduce the heat to low. Add the cubed cream cheese and stir constantly until it melts completely into the meat mixture.
  4. Stir in the sour cream and 1/2 cup of the shredded cheese until everything is fully combined and creamy. Cook for 1 more minute until heated through.
  5. Warm your taco shells or tortillas according to package directions.
  6. Spoon the creamy ground beef mixture into the shells or tortillas.
  7. Top each taco with the remaining 1/2 cup of shredded cheese and any desired toppings. Serve immediately.

Notes

  • For a richer flavor, use homemade taco seasoning instead of a packet.
  • If the filling seems too thick, add one or two tablespoons of milk or water until you reach your preferred consistency.
  • You can assemble this as a casserole by placing the meat mixture in a baking dish, topping with all the cheese, and baking at 375 degrees Fahrenheit for 15 minutes until bubbly.
