Make this rich and satisfying baked casserole featuring seasoned ground beef smothered in a homemade queso sauce and baked until bubbly.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup milk
  • 8 ounces Velveeta or similar processed cheese, cubed
  • 1 cup shredded Monterey Jack cheese
  • 1 cup crushed tortilla chips (for topping)
  • 1/2 cup sour cream (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the taco seasoning mix into the beef and onion mixture. Cook for one minute until fragrant.
  4. In a medium saucepan, whisk together the cream of mushroom soup, diced tomatoes and green chilies, and milk. Heat over medium heat until warm, stirring constantly.
  5. Reduce the heat to low and add the cubed processed cheese. Stir until the cheese is completely melted and the sauce is smooth. This is your queso sauce.
  6. Spread half of the seasoned ground beef mixture into the bottom of the prepared baking dish.
  7. Pour half of the queso sauce evenly over the beef layer. Sprinkle with half of the shredded Monterey Jack cheese.
  8. Repeat the layers: remaining ground beef, remaining queso sauce, and remaining Monterey Jack cheese.
  9. Bake for 20 minutes, or until the casserole is heated through and the cheese is melted.
  10. Remove from the oven. Top with crushed tortilla chips and dollops of sour cream. Bake for an additional 5 minutes until the chips are slightly toasted.
  11. Let the dish rest for 5 minutes before serving.

Notes

  • You can substitute cream of cheddar soup for cream of mushroom soup for a stronger cheese flavor.
  • For extra spice, add one minced jalapeño to the beef while cooking.
  • Use your favorite type of processed cheese for the queso base.
