- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cardamom
- ⅛ teaspoon ground cloves
- ⅛ teaspoon ground nutmeg
- 1 teaspoon salt
- 1 large egg
- 1 ¼ cups milk
- 3 tablespoons butter, melted
- 2 tablespoons white sugar
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
- In a large bowl, sift together the flour, baking powder, cinnamon, ginger, cardamom, cloves, nutmeg, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, sugar, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
- Gently fold in the mashed bananas.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake.
- Cook until bubbles appear on the surface, then flip and cook until golden brown on the other side.
- Serve warm and enjoy!
Notes
- For extra flavor, you can add a pinch of black pepper to the spice mix.
- If you don’t have all the chai spices, use a pre-made chai spice blend.
- Ensure your bananas are very ripe for the best flavor and sweetness.
- Serve with maple syrup, whipped cream, or extra banana slices.
