- 4 thick slices of challah or brioche bread
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- Pinch of salt
- 2 tablespoons butter, divided
- 2 ripe bananas, sliced
- 2 tablespoons brown sugar
- In a shallow dish, whisk together eggs, milk, vanilla extract, cinnamon, and salt.
- Heat 1 tablespoon of butter in a non-stick skillet over medium heat.
- Dip each slice of bread into the egg mixture, coating both sides.
- Place the coated bread slices in the skillet and cook for 3-4 minutes per side, until golden brown and cooked through.
- While the French toast is cooking, melt the remaining 1 tablespoon of butter in a separate skillet over medium heat.
- Add the sliced bananas and brown sugar to the skillet. Cook, stirring occasionally, until the bananas are softened and caramelized, about 5-7 minutes.
- Serve the caramelized bananas over the French toast.
Notes
- For an extra special touch, you can sprinkle the French toast with powdered sugar or serve with a drizzle of maple syrup.
- Challah or brioche bread works best because its richness and density hold up well to the egg mixture.
