Make these simple, sweet, and salty holiday cookies using Ritz crackers, caramel, and chocolate. This no-bake recipe is perfect for quick holiday treat preparation.

Ingredients

Scale
  • 1 sleeve Ritz Crackers (about 30 crackers)
  • 1 cup light brown sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup caramel topping (store-bought or homemade)
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (optional, for smoother dipping)
  • Holiday sprinkles (optional, for decoration)

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a small saucepan over medium heat, combine the brown sugar and butter. Stir constantly until the butter melts and the mixture comes to a full boil.
  3. Boil the mixture for exactly 1 minute, stirring gently. Do not overcook.
  4. Remove the saucepan from the heat. Stir in the caramel topping until fully combined.
  5. Working quickly, dip each Ritz cracker into the hot caramel mixture, coating the top surface completely. You can use a fork or tongs for dipping.
  6. Place the coated crackers onto the prepared parchment-lined baking sheet.
  7. Allow the caramel layer to set slightly, about 10 minutes at room temperature.
  8. Melt the chocolate chips with the coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  9. Drizzle or dip the caramel side of each cracker into the melted chocolate.
  10. Immediately sprinkle with holiday sprinkles, if desired.
  11. Refrigerate the cookies for at least 30 minutes, or until the chocolate is firm.
  12. Store the finished cookies in an airtight container.

Notes

  • If you prefer a full coating, you can dip the entire cracker into the caramel mixture, but ensure you work quickly before the caramel hardens.
  • For a saltier flavor, sprinkle a tiny pinch of flaky sea salt over the chocolate before it sets.
  • You can substitute milk or white chocolate chips for the semi-sweet chips based on your preference.
