Ingredients
Scale
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 cups granulated sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 large eggs
1 cup buttermilk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup hot brewed coffee
For the Glaze: 1 cup white chocolate chips
1/2 cup sweetened condensed milk
1/2 cup granulated sugar
1/4 cup water
1/2 cup glucose syrup
1/2 cup sweetened condensed milk
1/2 cup water
1/4 cup powdered gelatin
Black food coloring gel
Silver and gold edible glitter or dust
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
Add the eggs, buttermilk, oil, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for two minutes.
Carefully stir in the hot coffee until the batter is smooth. The batter will be thin.
Pour the batter evenly into the prepared pans. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
Prepare the mirror glaze: Bloom the gelatin in 1/4 cup cold water.
In a saucepan, combine the sugar, 1/2 cup water, and 1/2 cup sweetened condensed milk. Heat until the sugar dissolves. Remove from heat.
Add the bloomed gelatin and glucose syrup to the hot mixture, stirring until dissolved.
Pour this mixture over the white chocolate chips and the remaining 1/2 cup sweetened condensed milk. Stir until smooth.
Add black food coloring gel until you achieve a deep, opaque black color. Strain the glaze to remove air bubbles. Let the glaze cool to 90°F (32°C) before pouring.
Place the cooled, stacked cake on a wire rack set over a baking sheet. Pour the glaze evenly over the top, allowing it to drip down the sides.
While the glaze is still slightly wet, use a small brush or toothpick dipped in silver and gold dust to paint the Capricorn constellation pattern onto the cake.
Chill the cake until the glaze is set before serving.
Notes
For a heart-shaped cake, use heart-shaped pans or cut the cooled round layers into the desired shape before glazing.
Ensure your cake layers are completely frozen or very cold before pouring the mirror glaze for the best finish.
Use high-quality black gel coloring for the deepest, most dramatic galaxy effect.
