Ingredients
Scale
1 medium head green cabbage, thinly sliced
1 tablespoon vegetable oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
1/2 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
Optional: 1/2 cup sliced carrots or bell peppers
Instructions
Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, and sesame oil. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
Add the minced garlic and grated ginger to the hot oil. Stir constantly for about 30 seconds until fragrant. Do not let the garlic burn.
Add the sliced cabbage (and any optional vegetables) to the wok. Stir fry for 3 to 5 minutes until the cabbage starts to wilt but remains crisp-tender.
Pour the prepared sauce mixture over the cabbage. Toss quickly to coat everything evenly.
Stir the cornstarch slurry again and pour it into the wok. Cook for 1 minute, stirring constantly, until the sauce thickens slightly and coats the vegetables.
Remove from heat immediately and serve hot.
Notes
For crisp-tender cabbage, cook it quickly over high heat. Avoid overcrowding the pan, which causes steaming instead of frying.
You can add cooked protein like cubed tofu, sliced chicken, or shrimp during step 4. Adjust cooking time as needed for the protein.
Serve this stir fry over steamed white rice or cooked noodles for a complete meal.
