Ingredients
Scale
1 lb boneless, skinless chicken breasts
1/2 cup buffalo wing sauce
2 tablespoons melted butter
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked brown rice or quinoa
2 cups shredded romaine lettuce
1/2 cup chopped celery
1/2 cup shredded carrots
1/4 cup blue cheese crumbles or ranch dressing
Instructions
Cook the chicken breasts using your preferred method (bake, grill, or pan-fry) until fully cooked.
In a small bowl, whisk together the buffalo sauce, melted butter, garlic powder, salt, and pepper.
Shred or dice the cooked chicken. Toss the chicken thoroughly with the buffalo sauce mixture until coated.
Assemble the bowls: Divide the cooked rice or quinoa among four containers.
Top the grain base evenly with the shredded lettuce, celery, and carrots.
Place the sauced buffalo chicken on top of the vegetables.
Sprinkle with blue cheese crumbles or drizzle with ranch dressing just before serving or storing.
Notes
For a low-carb option, substitute the rice or quinoa with cauliflower rice.
Prepare the chicken and chop the vegetables ahead of time for faster assembly during the week.
Store the dressing or blue cheese crumbles separately until you are ready to eat to prevent sogginess.
