Ingredients

Scale
  • 1 medium head cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsweetened almond milk
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon white vinegar
  • 1 teaspoon honey (optional, for a touch of sweetness)
  • Ranch or blue cheese dressing, for serving
  • Celery sticks, for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with all-purpose flour, almond flour, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Gradually add the almond milk, tossing until the cauliflower is well-coated and a light batter forms.
  4. Spread the coated cauliflower in a single layer on the prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway through, until the cauliflower is tender and lightly golden.
  6. While the cauliflower bakes, prepare the buffalo sauce. In a small saucepan, whisk together the hot sauce, melted butter, white vinegar, and honey (if using). Heat gently over low heat until the butter is melted and the sauce is combined. Do not boil.
  7. Once the cauliflower is baked, transfer the florets to a clean large bowl.
  8. Pour the buffalo sauce over the cauliflower and toss gently to coat each piece.
  9. Return the sauced cauliflower to the baking sheet and bake for another 5-7 minutes, or until the sauce is slightly caramelized and sticky.
  10. Serve hot with ranch or blue cheese dressing and celery sticks.

Notes

  • For s crispier bite, you can double-coat the cauliflower. Dip the floured cauliflower in the almond milk mixture a second time before baking.
  • Adjust the amount of hot sauce to your preferred spice level.
  • If you don’t have almond flour, you can use more all-purpose flour, but the texture will be slightly different.
  • This recipe is easily made vegan by omitting the honey or using a vegan sweetener.
