Ingredients
Scale
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup blackberry jam
1 teaspoon fresh lemon zest
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Mix in the vanilla extract.
In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined into a dough. Do not overmix.
Press two-thirds of the dough evenly into the bottom of the prepared pan.
In a small bowl, stir the lemon zest into the blackberry jam until combined. Dollop spoonfuls of the jam mixture over the dough base. Use a knife or offset spatula to gently swirl the jam into the dough.
Crumble the remaining one-third of the dough evenly over the top of the jam layer.
Bake for 30 to 35 minutes, or until the edges are lightly golden brown.
Let the shortbread cool completely in the pan on a wire rack.
Once cool, use the parchment paper overhang to lift the shortbread from the pan. Cut into 12 or 16 wedges before serving.
Notes
For a cleaner cut, chill the baked shortbread for at least one hour before slicing.
You can substitute frozen blackberries (thawed and drained) for the jam if you prefer whole fruit, but you may need to slightly increase the baking time.
Dust the cooled wedges with powdered sugar before serving for added sweetness.
