Make fudgy, moist brownie bars that combine the rich flavor of chocolate brownies with the sweetness of banana bread, studded with crunchy walnuts.

Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1/2 cup chopped walnuts, lightly toasted
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas until just combined.
  4. In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Do not overmix.
  6. Stir in the milk, chocolate chips, and chopped walnuts until evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
  10. Cut into 16 squares for snack time portions.

Notes

  • To toast walnuts, spread them on a baking sheet and bake at 350°F (175°C) for 5 to 7 minutes until fragrant. Let them cool before adding to the batter.
  • For a more distinct banana bread swirl, reserve 1/4 cup of the batter and mix it with 1/4 teaspoon of cinnamon before swirling it gently over the top of the main batter layer before baking.
  • These bars freeze well. Wrap individual squares tightly in plastic wrap and place them in a freezer-safe bag for up to 3 months.
