Ingredients
Scale
2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 large egg
1/2 cup milk
1/4 cup melted unsalted butter
1 cup peeled, cored, and finely diced apple (about 1 large apple)
1/4 cup powdered sugar (for glaze)
1 teaspoon vanilla extract (for glaze)
1 tablespoon milk or apple cider (for glaze)
Pinch of ground cinnamon (for glaze topping)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.
In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
In a separate medium bowl, whisk the egg, milk, and melted butter until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix the batter.
Fold in the diced apples gently.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
While the fritters bake, prepare the glaze. In a small bowl, whisk together the powdered sugar, vanilla extract, and 1 tablespoon of milk or apple cider until smooth. Add more liquid, a drop at a time, if the glaze is too thick.
Remove the fritters from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool slightly more.
Drizzle the cinnamon vanilla glaze over the warm fritters. Sprinkle a tiny pinch of cinnamon over the wet glaze.
Serve warm or at room temperature.
Notes
Use firm, slightly tart apples like Honeycrisp or Granny Smith for the best texture after baking.
If you prefer a thicker glaze, reduce the liquid added in step 5.
You can substitute whole wheat flour for half of the all-purpose flour for a slightly heartier fritter.
