Make a simple, rustic French apple tart featuring thinly sliced apples arranged over a buttery pastry crust.

Ingredients

Scale
  • 1 sheet puff pastry or shortcrust pastry
  • 4 medium Gala apples, peeled, cored, and thinly sliced
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon apricot jam (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. If using homemade shortcrust, roll it out to about a 10-inch circle. If using store-bought puff pastry, unfold it onto the prepared baking sheet.
  3. Arrange the apple slices over the pastry, overlapping them slightly in concentric circles, leaving a 1-inch border around the edge.
  4. Brush the apples lightly with the melted butter.
  5. Sprinkle the granulated sugar evenly over the apples.
  6. Fold the pastry border up and over the edge of the apples to create a rustic rim.
  7. Bake for 30 to 35 minutes, or until the crust is golden brown and the apples are tender.
  8. While the tart is still warm, gently heat the apricot jam with 1 teaspoon of water until liquid. Brush this glaze over the baked apples for shine.
  9. Let the tart cool slightly before slicing.

Notes

  • For a richer flavor, substitute Gala apples with Granny Smith or Honeycrisp.
  • If you prefer a custard base, spread a thin layer of frangipane or pastry cream on the dough before arranging the apples.
  • Add a light dusting of cinnamon before baking for a spiced flavor.
