Ingredients
Scale
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1 large egg
1 cup plain Greek yogurt (2% or whole milk recommended)
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup finely diced apple (such as Honeycrisp or Granny Smith)
1/4 cup chopped walnuts or pecans (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In a separate medium bowl, whisk the granulated sugar, brown sugar, egg, Greek yogurt, oil, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are acceptable.
Fold in the diced apple and any optional nuts.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
Using Greek yogurt keeps these muffins very moist compared to recipes using only milk or buttermilk.
If you prefer a sweeter topping, sprinkle a mixture of 1 tablespoon brown sugar and 1/4 teaspoon cinnamon over the batter before baking.
