Enjoy crispy, golden zucchini fries made easily in your air fryer. This recipe offers a healthier alternative to traditional fries, perfect for a quick snack or side dish.

Ingredients

Scale
  • 1 large zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Cooking spray or oil

Instructions

  1. Wash and trim the ends off the zucchini. Cut the zucchini into 1/2-inch thick sticks.
  2. In a small bowl, whisk together the flour, salt, pepper, garlic powder, and paprika.
  3. Set up a breading station with three shallow dishes. Place the flour mixture in the first dish, the beaten eggs in the second, and the panko breadcrumbs in the third.
  4. Dip each zucchini stick first into the flour mixture, shaking off any excess.
  5. Next, dip the floured zucchini stick into the beaten eggs, letting any excess drip off.
  6. Finally, coat the zucchini stick with panko breadcrumbs, pressing gently to adhere.
  7. Arrange the coated zucchini sticks in a single layer in your air fryer basket. Do not overcrowd. You may need to cook in batches.
  8. Lightly spray the zucchini fries with cooking spray or drizzle with a little oil.
  9. Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve immediately with your favorite dipping sauce.

Notes

  • For extra crispiness, you can double-coat the zucchini sticks.
  • Experiment with different seasonings in the flour or breadcrumbs, such as Italian seasoning or cayenne pepper for a little heat.
  • Serve with marinara sauce, ranch dressing, or a spicy aioli for dipping.
