Ingredients
Scale
6 slices thick-cut bread (Texas toast or brioche work well)
2 large eggs
1/4 cup milk (any type)
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1 tablespoon granulated sugar (for the egg mixture)
1/2 cup granulated sugar (for coating)
1 tablespoon ground cinnamon (for coating)
Cooking spray
Instructions
Cut each slice of bread into three equal sticks.
In a shallow dish, whisk together the eggs, milk, vanilla extract, 1/4 teaspoon cinnamon, and 1 tablespoon of sugar until combined.
In a separate small, shallow dish, mix the 1/2 cup sugar and 1 tablespoon cinnamon for the coating.
Dip each bread stick into the egg mixture, allowing excess to drip off. Do not soak the bread.
Lightly spray the air fryer basket with cooking spray. Arrange the dipped sticks in a single layer in the air fryer basket, ensuring they do not overlap. You may need to work in batches.
Spray the tops of the sticks lightly with cooking spray.
Air fry at 375°F (190°C) for 6 to 8 minutes, flipping halfway through, until golden brown and cooked through.
Remove the cooked sticks from the air fryer and immediately toss them gently in the cinnamon sugar mixture until fully coated.
Repeat with the remaining bread sticks. Serve warm.
Notes
For best results, use slightly stale bread; it absorbs the custard better without falling apart.
If you prefer a thicker coating, dip the sticks in the egg mixture twice before coating them in the cinnamon sugar.
You can prepare the sticks (dipped but not cooked) up to 24 hours ahead. Store them in an airtight container in the refrigerator and add 1-2 minutes to the air frying time.
