Ingredients
Scale
4 large Russet potatoes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded sharp cheddar cheese
8 slices cooked bacon, crumbled
1/2 cup sour cream
2 tablespoons chopped fresh chives
Instructions
Preheat your air fryer to 400°F (200°C).
Wash and dry the potatoes thoroughly. Pierce each potato several times with a fork.
Bake the potatoes directly in the air fryer basket at 400°F (200°C) for 40 to 50 minutes, or until tender when squeezed.
Remove potatoes and let them cool until you can handle them safely.
Slice each potato in half lengthwise. Scoop out most of the inside flesh, leaving about a 1/4-inch thick shell. Reserve the scooped flesh for another use.
Brush the outside and inside of the potato shells lightly with olive oil. Sprinkle with salt and pepper.
Place the shells skin-side down in the air fryer basket in a single layer. Air fry at 380°F (195°C) for 8 minutes.
Flip the skins over and air fry for another 5 to 7 minutes until the edges are visibly crisp.
Remove the skins from the air fryer. Fill each skin evenly with shredded cheese and crumbled bacon.
Return the filled skins to the air fryer for 2 to 3 minutes, just until the cheese melts.
Top the melted cheese with a dollop of sour cream and a sprinkle of fresh chives before serving.
Notes
For the crispiest results, ensure the potato skins are completely dry before oiling and seasoning them.
Do not overcrowd the air fryer basket; work in batches if necessary to allow air circulation around every skin.
If you prefer vegetarian skins, skip the bacon and add sautéed onions or green peppers with the cheese.
