Ingredients
Scale
1 tablespoon olive oil
1 small yellow onion, diced
1 pound cooked corned beef, shredded or chopped
2 cups cooked potatoes, diced (leftover baked or boiled potatoes work best)
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Pinch of salt (optional, as corned beef is salty)
2 large eggs (for serving)
Instructions
In a small skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 4 minutes.
In a bowl, combine the cooked corned beef, diced potatoes, cooked onions, garlic powder, and pepper. Mix gently to combine without mashing the potatoes.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 3 minutes.
Lightly spray the air fryer basket with cooking spray. Place the hash mixture into the air fryer basket in a single layer, or in two batches if necessary, to promote crisping. Do not overcrowd the basket.
Air fry for 10 minutes.
Carefully pull out the basket and shake well to flip the hash. Return to the air fryer and cook for another 5 to 8 minutes, or until the potatoes are golden brown and crispy.
While the hash finishes, cook your eggs to your preference (fried or poached work well).
Serve the crispy corned beef hash immediately topped with a cooked egg.
Notes
Using pre-cooked, chilled, and diced potatoes helps achieve the best crispiness in the air fryer.
For extra crispy edges, you can lightly spray the top of the hash with cooking spray before the final 5 minutes of cooking.
This recipe works well for reheating leftover corned beef hash.
