Make crispy coconut shrimp in your air fryer with a simple breading process, served with a homemade sweet chili dipping sauce.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined, tails on optional
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sweetened shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil spray
  • For the Sauce:
  • 1/2 cup sweet chili sauce (store-bought or homemade)
  • 1 tablespoon lime juice

Instructions

  1. Pat the shrimp very dry using paper towels. This helps the coating stick.
  2. Set up a standard three-stage breading station: Place flour, salt, and pepper in one shallow dish. Place beaten eggs in a second dish. Mix shredded coconut and panko breadcrumbs in a third dish.
  3. Dredge each shrimp first in the flour mixture, shaking off excess.
  4. Dip the floured shrimp into the egg wash, letting excess drip off.
  5. Press the shrimp firmly into the coconut-panko mixture until fully coated. Place coated shrimp on a plate.
  6. Preheat your air fryer to 380 degrees Fahrenheit for 5 minutes.
  7. Lightly spray the coated shrimp on both sides with olive oil spray. This aids crisping.
  8. Arrange the shrimp in a single layer in the air fryer basket, working in batches if necessary. Do not overcrowd the basket.
  9. Air fry for 8 to 10 minutes, flipping the shrimp halfway through the cooking time, until the coating is golden brown and the shrimp are opaque.
  10. While the shrimp cooks, whisk together the sweet chili sauce and lime juice for the dipping sauce.
  11. Serve the hot coconut shrimp immediately with the sweet chili sauce.

Notes

  • For best results, freeze the coated shrimp on a baking sheet for 15 minutes before air frying; this helps the coating adhere during cooking.
  • If you prefer a less sweet coating, substitute half of the shredded coconut with unsweetened coconut flakes.
  • If using frozen coconut shrimp, follow package directions for air frying, usually around 400 degrees Fahrenheit for 10-12 minutes, adjusting based on your air fryer model.
